Honey Garlic Chicken Thighs in Broccoli Slaw

- 8 Chicken Thighs Boneless and Skinless
- ½ Cup of Honey Raw
- 6 Cloves of Garlic Minced
- ¼ Cup of Soy Sauce
- 1 Cup of Chicken Stock Low Sodium
- Dash of Olive Oil Extra Virgin
Ingredients for Slaw:
- 1 Head of Broccoli Fresh and Washed
- ½ Cup of Carrots Grated
- ¼ Cup of Raisins Fresh
- 1 teaspoon of Black Pepper For Taste
- ½ teaspoons of Salt For Taste
- ¼ Cup of Cashews Crushed
- ½ Cup of Mayonnaise Low Fat
Heat your olive oil in a large cast iron skillet over medium heat. Add in your chicken thighs, and brown.
Dash of Olive Oil, 8 Chicken Thighs
Next add in your garlic, honey, and soy sauce, stir to coat thighs. Cook thighs about a minute per side in honey sauce.
½ Cup of Honey, 6 Cloves of Garlic, ¼ Cup of Soy Sauce
Then add in your chicken stock, bring to simmer, reduce heat to medium-low, cover with a lid or foil and cook for 25 minutes or until chicken is no longer pink inside.
1 Cup of Chicken Stock
For your slaw, peel broccoli stalk and grate broccoli using food processor. Combine with your grated broccoli with remaining ingredients and refrigerate for 20 minutes before serving. Serve and enjoy.
