About Wasim Abbas Bhatti, The Fish’s Chef Behind Mahigar
I’m Chef Wasim Abbas Bhatti. Most people who read Mahigar just call me the Fish’s Chef. For more than twenty years, fish has been the one subject I’ve never stopped studying: how to buy it, handle it, season it, and cook it until it’s exactly right. Mahigar is where that expertise lives, built one tested recipe at a time.
Twenty Years of Getting Fish Right
My approach has never changed: cook it, taste it critically, work out exactly what’s wrong, fix that one thing, and cook it again. I didn’t learn fish cookery in a professional kitchen or a culinary program; I built it myself, recipe by recipe, over more than two decades. Every dish on Mahigar has already been through that process before you ever see it. If it’s published here, it’s because I already made the version that didn’t work, found out why, and corrected it until it did.
Eight Years on the Canals: Fish Knowledge That Starts Before the Kitchen
Before a fish ever reaches my kitchen, I usually understand it from the other end too. I’ve spent eight years fishing local canals with a net, which means I know these fish before they’re an ingredient: how they move, what condition they’re in when they’re caught, how quickly they need to be handled after that. That’s not something you get at a fish counter, and it’s part of why I cook fish differently than someone working from a recipe alone.
My Specialty Isn’t a Species; It’s the Process
I’ve built my own spice blends specifically for fish: for the grill and barbecue, for deep frying, for rich gravies, and for curries that need real depth, not just heat. Getting a blend right for fish specifically, rather than borrowing one built for chicken or beef, took years to get consistent.
The species I know most intimately are the ones available where I live and fish: carp, roach, catla, tilapia, pangasius, catfish, and wallago attu a giant freshwater catfish most cooks outside South Asia have never even heard of. But the reason Mahigar can cover fish from every corner of the world salmon, cod, tuna, trout, and beyond is the same reason I can cook any of them with confidence: the process is what I mastered, not a single species. The same testing and correcting that perfects a wallago attu curry is exactly what perfects a salmon fillet. Good fish cookery was never really about which fish is in front of you. It’s about understanding what heat, time, and seasoning actually do to fish.
Why “The Fish’s Chef”
Mahigar means exactly that: the fish’s chef. It’s not a title I was given; it’s the one I set out to earn, one recipe, one corrected mistake, and one new spice blend at a time. Everything on this site is built to make that title mean something: tested technique, real species knowledge, and recipes that work the first time you try them.

A Bit More About Me
My formal background is actually in graphic design, which probably explains why I care as much about how a dish looks on the plate as how it tastes. Fish is where my real focus has always gone, though, for more than twenty years now. I’ll be adding photos here from my own kitchen and my fishing trips, so this page keeps growing the same way my recipes do.
