Paprika cheese is a type of cheese that includes paprika and other herbs such as parsley, pepper, or onion. It can be purchased at a deli counter or made at home. To prepare it, cottage cheese is placed in a sieve and pushed through the mesh into a mixing bowl using a wooden spoon. The butter is then creamed by beating it against the side of another mixing bowl with a wooden spoon, and the cottage cheese, paprika, black pepper, salt, caraway seeds, mustard, capers, onion, and sour cream are added and mixed vigorously until a smooth paste, called paprika cheese, is formed. This cheese can be spread in sandwiches, used as a filling in crepes, or as a topping on pizzas. The addition of paprika gives the cheese a peppery flavor.
