Soya curds

Soya curds, also known as tofu, is a food product made by curdling soy milk. To make soy curd, dried soybeans are soaked in water for about 12 hours to rehydrate them. The beans are then ground with water to make a slurry, which is cooked and then separated by centrifugal force into soy milk and pulp. The pulp, called okara, is often used as animal feed in the United States, but in Asia, it is also eaten on its own or in various dishes. Soy curd is a versatile food that can be used in a variety of dishes, from savory to sweet.
