Cheez Whiz is a type of processed cheese sauce that has a soft consistency at room temperature. It is a bright yellow color, achieved by adding a coloring agent called annatto, and is often used as a dip or topping in various recipes. Unlike traditional melting cheeses, Cheez Whiz is not considered a melting cheese. To create Cheez Whiz, milk protein concentrate is used to address some of the challenges that arise when working with cheese solids.
Regular cheese is then reprocessed by adding emulsifiers and stabilizers such as xanthan gum, which help to create a smooth and consistent texture. Citric acid and flavoring agents are also added to provide tanginess and flavor to the finished product.
